Here is a great breakfast burritos recipe that everyone is sure to enjoy. It is an easy meal to prepare and a favorite among everyone that I camp and hunt with.
The first ingredient that you will start with will be fried potatoes that you can either prepare from scratch or use pre made hash browns such as O’Brien potatoes like the ones I use with the sausage hash browns in the eggs and hash browns recipe.
Here are the ingredients that you will need.
Ingredients
One bag of O’Brien potatoes. (See additional ingredients below if you decide to prepare the hash browns from scratch for the breakfast burritos.)
Eggs (Around two for each person. You can adjust this to meet your own needs.)
Sour cream.
Flower Tortillas.
Salsa.
Jalapenos. (Optional)
Cooking oil. (May be substituted with olive oil or butter.)
Additional Ingredients
These are the additional ingredients you will need to you would like to prepare the hash browns form scratch.
Potatoes. (About three medium per person)
Bell Peppers. (Both green and red)
Onion (Use only one half onion, or an amount to meet everyone’s taste.)
Jalapenos. (Optional)
To prepare the hash browns, cut up the potatoes, bell peppers, onion and jalapenos into small pieces and mix everything together.
Preparing the Breakfast Burritos
In a large pan fry up the hash browns with the jalapenos if desired. While the hash browns are cooking, beat the eggs in the same way you would if you were making scrambled eggs.
When the hash browns are done, pour in the eggs and mix everything together and continue to cook until the eggs are done.
We always use the flower tortillas right out of the bag, but you can warm them in a pan if you desire.
Now it’s time to dish up the potatoes and egg mixture into a tortilla, add some sour cream and salsa and enjoy.
